- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 cups heavy cream
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup toasted pecans, chopped
Instructions
- Combine graham cracker crumbs, sugar, and melted butter in a bowl, mixing until resemble wet sand.
- Press the mixture into the bottom and up the sides of a 9-inch pie pan to create the crust.
- Whip heavy cream in a separate bowl using an electric mixer until soft peaks form.
- Add powdered sugar and vanilla extract to the cream, whipping until stiff peaks form.
- Fold in the chopped toasted pecans using a spatula, being careful not to deflate the cream.
- Spoon the pecan cream filling into the prepared crust, smoothing the top.
- Chill the pie in the refrigerator for at least 120 minutes before serving.
- Sprinkle additional chopped toasted pecans on top just before serving for garnish.
Notes
Make the pie ahead of time and store it in the refrigerator for a couple of days to enhance flavor. Optional: Use a store-bought graham cracker crust for convenience.
