- 1 cup peanut butter
- 1/2 cup honey or maple syrup
- 2 cups rolled oats
- 1/2 cup chocolate chips
- 1/4 cup coconut oil
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Mix together the peanut butter and honey (or maple syrup) in a mixing bowl until smooth.
- Stir in the rolled oats until the mixture is well combined.
- Press the mixture into a lined 8×8 inch baking dish to form a compact base.
- Melt the chocolate chips and coconut oil together in a small saucepan over low heat until smooth.
- Combine the powdered sugar and vanilla extract with the melted chocolate until uniform.
- Pour the chocolate mixture over the oat layer and spread evenly.
- Chill the dish in the refrigerator for at least 2 hours to firm up.
- Slice the bars to your desired size and serve.
