Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, until just combined.
- Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake cools, prepare the mousse by blooming the gelatin in cold water for 5 minutes.
- In a saucepan, gently heat the peach and passionfruit purees until warm, then stir in the bloomed gelatin until dissolved.
- In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
- Fold the fruit mixture into the whipped cream until fully combined.
- Once the cake is completely cool, spread the mousse evenly over the top and refrigerate for at least 4 hours to set.
- Before serving, garnish with fresh peach slices and passionfruit pulp.
