- 1 lb. shrimp (peeled and deveined)
- 1 tbsp olive oil
- 8 oz fettuccine noodles
- 2 tbsp unsalted butter
- 2 tsp minced garlic
- 2 cups chicken broth
- ½ cup whole milk
- 1 ½ cups heavy whipping cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Pinch of nutmeg
- Fresh chopped parsley for garnish
Instructions
- Sauté the shrimp: Heat the olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then cook for about 2-3 minutes on each side until opaque. Remove and set aside.
- Prepare the sauce base: In the same skillet, melt the butter over medium heat, then add minced garlic and sauté for about 30 seconds.
- Mix in the liquids: Pour in the chicken broth and whole milk, whisking to create a smooth mixture.
- Cook the fettuccine: Add fettuccine noodles, cover and simmer for about 10-12 minutes until tender.
- Thicken the sauce: Stir in the heavy whipping cream and cook for about 3-4 minutes to thicken.
- Add the cheese and seasonings: Mix in grated Parmesan, nutmeg, and adjust seasoning.
- Combine the shrimp: Return cooked shrimp to skillet, tossing to coat.
- Garnish and serve: Sprinkle with parsley and serve hot.
