  • 8 oz fettuccine noodles
  • 2 tbsp unsalted butter
  • 2 tsp minced garlic
  • 2 cups chicken broth
  • ½ cup whole milk
  • 1 ½ cups heavy whipping cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Pinch of nutmeg
  • Fresh chopped parsley for garnish

Instructions

  1. Sauté the shrimp: Heat the olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then cook for about 2-3 minutes on each side until opaque. Remove and set aside.
  2. Prepare the sauce base: In the same skillet, melt the butter over medium heat, then add minced garlic and sauté for about 30 seconds.
  3. Mix in the liquids: Pour in the chicken broth and whole milk, whisking to create a smooth mixture.
  4. Cook the fettuccine: Add fettuccine noodles, cover and simmer for about 10-12 minutes until tender.
  5. Thicken the sauce: Stir in the heavy whipping cream and cook for about 3-4 minutes to thicken.
  6. Add the cheese and seasonings: Mix in grated Parmesan, nutmeg, and adjust seasoning.
  7. Combine the shrimp: Return cooked shrimp to skillet, tossing to coat.
  8. Garnish and serve: Sprinkle with parsley and serve hot.
