  • 1/2 cup olives (Kalamata or green)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil (optional)

Instructions

  1. Cook the Pasta: Begin by boiling water in a large pot. Generously salt the boiling water, then add your pasta. Cook according to package instructions until al dente, stirring occasionally. Once done, drain and set aside.
  2. Sauté Garlic: In a skillet, heat olive oil over medium heat. Once shimmering, toss in minced garlic, sautéing just until it releases its aroma. Be careful not to burn it.
  3. Incorporate Sun-dried Tomatoes and Olives: Add the sun-dried tomatoes and olives, allowing them to warm through and meld in flavor.
  4. Combine with Pasta: Return the drained pasta to the skillet. Toss thoroughly, coating the noodles with the mixture.
  5. Crumble Feta: Generously crumble feta cheese over the top. Gently fold it in with the pasta.
  6. Season & Serve: Finish with a dash of salt and pepper. If desired, top with fresh basil before serving. Enjoy immediately!
