Ingredients

  • 4 white fish fillets (cod, sea bass, tilapia, or corvina)
  • 2 tbsp olive oil
  • Salt & black pepper to taste
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 2 cups cherry tomatoes
  • 1/2 cup mixed olives (green & Kalamata)
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 2 tbsp fresh parsley, chopped
  • Lemon slices (optional for garnish)
  • Chili flakes (optional for garnish)
  • Extra parsley (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the fillets dry and season with salt, black pepper, paprika, and garlic powder.
  3. In a baking dish, combine cherry tomatoes, olives, garlic, olive oil, lemon juice, lemon zest, and thyme. Toss to combine.
  4. Nestle the fish fillets into the tomato mixture, ensuring they are partially submerged.
  5. Bake for 15–20 minutes until the fish flakes easily with a fork.
  6. Garnish with fresh parsley, lemon slices, and chili flakes if desired.

Notes

For best results, let fish come to room temperature before seasoning. You can prepare the tomato mixture a day in advance.
