- 4 white fish fillets (cod, sea bass, tilapia, or corvina)
- 2 tbsp olive oil
- Salt & black pepper to taste
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 2 cups cherry tomatoes
- 1/2 cup mixed olives (green & Kalamata)
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1 tsp lemon zest
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 2 tbsp fresh parsley, chopped
- Lemon slices (optional for garnish)
- Chili flakes (optional for garnish)
- Extra parsley (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the fillets dry and season with salt, black pepper, paprika, and garlic powder.
- In a baking dish, combine cherry tomatoes, olives, garlic, olive oil, lemon juice, lemon zest, and thyme. Toss to combine.
- Nestle the fish fillets into the tomato mixture, ensuring they are partially submerged.
- Bake for 15–20 minutes until the fish flakes easily with a fork.
- Garnish with fresh parsley, lemon slices, and chili flakes if desired.
Notes
For best results, let fish come to room temperature before seasoning. You can prepare the tomato mixture a day in advance.
