  • 1 cup cold heavy whipping cream (240 ml)
  • 1 cup mango puree (240 g) (for top layer)
  • 3/4 tsp agar-agar powder or 11/2 tsp gelatin
  • 23 tbsp water

Instructions

  1. Prepare the crust: In a mixing bowl, combine the graham cracker crumbs with melted butter. Mix until evenly coated, then firmly press the mixture into the bottom of a 9-inch springform pan. Chill in the fridge for 20–30 minutes.
  2. Mix the filling: Beat the cream cheese in a large bowl until smooth. Gradually mix in the powdered sugar and vanilla extract until creamy and well combined.
  3. Add mango puree: Pour in the mango puree and mix until the filling is a uniform, luscious hue.
  4. Prepare the whipped cream: In a separate bowl, whip the cold heavy whipping cream to soft peaks.
  5. Fold it together: Gently fold the whipped cream into the mango-cream cheese mixture using the rubber spatula until it transforms into a light, airy filling.
  6. Assemble the cheesecake: Pour the creamy mango filling over the chilled crust. Smoothen the surface gently, cover, and chill for 1–2 hours until slightly set.
  7. Make the top layer: In a small saucepan, mix the agar-agar powder with water. Heat gently, stirring constantly, until fully dissolved. Remove from heat and mix into the remaining mango puree.
  8. Pour and spread: Carefully pour the mango mixture over the slightly set cheesecake filling, spreading evenly with a spatula.
  9. Final chill: Refrigerate the cheesecake for at least 6 hours or overnight until fully set and firm.
  10. Serve: Slice into pieces and serve chilled.
