Description

Ingredients

  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs, separated
  • 1 cup low-fat buttermilk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 tbsp butter for the skillet
  • Fresh berries (optional)
  • Sugar-free syrup (optional)
  • Light dusting of cinnamon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk together the flour, sugar-free sweetener, baking powder, baking soda, and salt in a mixing bowl.
  3. Combine egg yolks, buttermilk, melted butter, and vanilla extract in another bowl.
  4. Merge the wet and dry ingredients, mixing gently.
  5. Whip the egg whites in a separate bowl until soft peaks form and fold them into the batter.
  6. Heat an oven-safe skillet over medium heat and add 1 tablespoon of butter.
  7. Pour the batter into the skillet and cook until the edges start to sizzle.
  8. Transfer the skillet to the oven and bake for about 15 minutes until golden.
  9. Cool for a few minutes before slicing and serving with optional toppings.

Notes

You can customize this pancake with nuts, chocolate chips, or a berry compote. Store leftovers in an airtight container in the fridge for up to 3 days.
