- 2 cups broccoli florets (fresh or frozen)
- 2 cups cauliflower florets (fresh or frozen)
- 1 large egg
- 1 cup cottage cheese (low-fat or full-fat)
- 2 tablespoons grated Parmesan cheese
- 1 cup shredded cheddar cheese
- 1 small onion, chopped (optional)
- 1 tablespoon olive oil (if using fresh vegetables)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 2 slices turkey bacon, cooked and crumbled (optional)
- 2 tablespoons chopped green onions (optional)
- 2 tablespoons breadcrumbs (for topping, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking dish.
- If using frozen vegetables, microwave them until defrosted and tender. If using fresh, sauté the broccoli and cauliflower in olive oil for about 5-6 minutes until tender-crisp.
- In a bowl, beat the egg and cottage cheese until smooth. Stir in garlic powder, onion powder, salt, and pepper.
- Place the sautéed vegetables in the greased baking dish and pour the cottage cheese mixture over them, stirring gently to combine.
- Fold in half of the shredded cheddar cheese and top with the remaining cheddar and Parmesan.
- Bake for 25-30 minutes, until golden brown and bubbly.
- Let cool for about 5 minutes, garnish with green onions, and serve warm.
Notes
Use low-fat cheeses for a lighter option. You can add red pepper flakes for extra heat and substitute turkey bacon for a vegetarian version.
