Ingredients

  • 2 cups broccoli florets (fresh or frozen)
  • 2 cups cauliflower florets (fresh or frozen)
  • 1 large egg
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tablespoons grated Parmesan cheese
  • 1 cup shredded cheddar cheese
  • 1 small onion, chopped (optional)
  • 1 tablespoon olive oil (if using fresh vegetables)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 slices turkey bacon, cooked and crumbled (optional)
  • 2 tablespoons chopped green onions (optional)
  • 2 tablespoons breadcrumbs (for topping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. If using frozen vegetables, microwave them until defrosted and tender. If using fresh, sauté the broccoli and cauliflower in olive oil for about 5-6 minutes until tender-crisp.
  3. In a bowl, beat the egg and cottage cheese until smooth. Stir in garlic powder, onion powder, salt, and pepper.
  4. Place the sautéed vegetables in the greased baking dish and pour the cottage cheese mixture over them, stirring gently to combine.
  5. Fold in half of the shredded cheddar cheese and top with the remaining cheddar and Parmesan.
  6. Bake for 25-30 minutes, until golden brown and bubbly.
  7. Let cool for about 5 minutes, garnish with green onions, and serve warm.

Notes

Use low-fat cheeses for a lighter option. You can add red pepper flakes for extra heat and substitute turkey bacon for a vegetarian version.
