Ingredients

- 1 block firm tofu
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme
- 1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Press the tofu to remove excess moisture by wrapping it in a clean kitchen towel and placing a heavy object on top for at least 15-30 minutes.
- Cut the tofu into cubes for even cooking.
- In a mixing bowl, whisk together the lemon juice, minced garlic, olive oil, herbs, salt, and pepper.
- Marinate the tofu cubes in the marinade for at least 30 minutes.
- Spread marinated tofu onto a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through, until golden-brown and crispy.
- Serve warm with salads, grain bowls, or wraps.
Notes
For the best flavor, allow the tofu to marinate longer. Customize herbs according to preference.
