Ingredients
Here’s a breakdown of what goes into this bold, smoky sauce and why each ingredient plays a role.
- 6 red jalapeños, stems removed — The foundation of the sauce, providing fruity, slightly sweet heat and a vibrant red color; fully ripened red jalapeños are slightly sweeter than green ones.
- 2–3 serrano peppers, stems removed — Adds an extra layer of sharp, noticeable heat on top of the jalapeños.
- 4 garlic cloves — Charred until soft, the garlic adds sweet, mellow depth and savory richness.
- ½ cup chopped tomatoes — Adds body, natural sweetness, and a touch of acidity that rounds out the sauce.
- ¼ cup apple cider vinegar — Adds tangy brightness and helps balance the heat.
- 2 tbsp fresh lime juice — Adds fresh, citrusy acidity that lifts the whole sauce.
- 2 tbsp olive oil — Adds richness and helps create a smooth, glossy texture.
- 1 tbsp honey — Balances the heat and acidity with a touch of natural sweetness.
- 1 tsp smoked paprika — Adds a warm, smoky undertone that complements the charred peppers.
- ½ tsp ground cumin — Adds earthy, warm depth.
- ½ tsp onion powder — Adds subtle savory depth.
- ½ tsp kosher salt — Enhances all the other flavors in the sauce.
- ¼ tsp black pepper — Adds a subtle, warm bite.
- ¼ cup water, plus more as needed — Helps blend the sauce to your preferred consistency.
Instructions
This recipe involves charring the peppers, blending, and a brief simmer. Here’s exactly how to make it.
Heat a large skillet over medium-high heat. Add the jalapeños, serranos, and garlic. Cook for 5–7 minutes, turning occasionally, until the peppers are blistered and lightly charred and the garlic is softened.
Transfer the roasted peppers and garlic to a blender. Add the tomatoes, apple cider vinegar, lime juice, olive oil, honey, smoked paprika, cumin, onion powder, salt, black pepper, and water.
Blend for 1–2 minutes until the sauce is completely smooth. Add another tablespoon or two of water if you prefer a thinner consistency.
Pour the blended sauce into a small saucepan. Bring it to a gentle simmer over medium-low heat and cook for 8–10 minutes, stirring occasionally. This mellows the vinegar and brings all the flavors together.
Add more lime juice for brightness, honey for sweetness, or another pinch of cayenne or extra serrano if you want even more heat.
Let the sauce cool for about 10 minutes. It will thicken slightly as it cools.
Drizzle over tacos, burritos, grilled meats, eggs, roasted vegetables, burgers, or crispy potatoes. It also makes an incredible dipping sauce!
