- 2 cups almond flour
- 1/4 cup erythritol
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup unsweetened almond milk
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- Additional for coating: 1/4 cup erythritol and 1 tablespoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and generously grease your donut pan.
- Combine the almond flour, erythritol, baking powder, cinnamon, and salt in a large mixing bowl.
- Whisk together the eggs, almond milk, melted coconut oil, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients, stirring gently until fully combined.
- Fill each cavity of your donut pan about 3/4 full with the batter.
- Bake the donuts for 15-18 minutes, until golden brown and a toothpick comes out clean.
- Let the donuts cool for a few minutes in the pan, then gently remove.
- Mix erythritol and cinnamon for the coating.
- Roll warm donuts in the cinnamon-sugar mixture to coat.
