Ingredients

  • 2 cups almond flour
  • 1/4 cup erythritol
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • Additional for coating: 1/4 cup erythritol and 1 tablespoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease your donut pan.
  2. Combine the almond flour, erythritol, baking powder, cinnamon, and salt in a large mixing bowl.
  3. Whisk together the eggs, almond milk, melted coconut oil, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until fully combined.
  5. Fill each cavity of your donut pan about 3/4 full with the batter.
  6. Bake the donuts for 15-18 minutes, until golden brown and a toothpick comes out clean.
  7. Let the donuts cool for a few minutes in the pan, then gently remove.
  8. Mix erythritol and cinnamon for the coating.
  9. Roll warm donuts in the cinnamon-sugar mixture to coat.
