A delightful and creamy dessert that captures the essence of Jamaica with sweet potatoes and coconut.


Ingredients

  • 2 cups grated sweet potato
  • 1 cup grated coconut
  • 1 cup coconut milk
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Optional Topping: 1/2 cup coconut milk
  • 2 tbsp brown sugar
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Combine the grated sweet potato, grated coconut, coconut milk, brown sugar, melted butter, flour, cinnamon, nutmeg, ginger, vanilla extract, and salt in a large mixing bowl.
  3. Mix until everything blends harmoniously.
  4. Pour the mixture into the prepared baking dish, smoothing the top.
  5. Bake for about 45-50 minutes until the pudding sets.
  6. While it bakes, create the optional topping by combining coconut milk, brown sugar, and butter in a saucepan over low heat until melted.
  7. Let the pudding cool for a few minutes before drizzling the custard layer on top.
  8. Serve warm and enjoy.
