- 2 cups grated sweet potato
- 1 cup grated coconut
- 1 cup coconut milk
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1/2 cup flour
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1 tsp vanilla extract
- 1/4 tsp salt
- Optional Topping: 1/2 cup coconut milk
- 2 tbsp brown sugar
- 1 tbsp butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Combine the grated sweet potato, grated coconut, coconut milk, brown sugar, melted butter, flour, cinnamon, nutmeg, ginger, vanilla extract, and salt in a large mixing bowl.
- Mix until everything blends harmoniously.
- Pour the mixture into the prepared baking dish, smoothing the top.
- Bake for about 45-50 minutes until the pudding sets.
- While it bakes, create the optional topping by combining coconut milk, brown sugar, and butter in a saucepan over low heat until melted.
- Let the pudding cool for a few minutes before drizzling the custard layer on top.
- Serve warm and enjoy.
