  • 1 cup small pasta (like acini di pepe or orzo)
  • 2 cups fresh spinach or escarole
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Carrots and celery for added flavor (optional)

Instructions

  1. In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper. Mix until well combined and form into small meatballs.
  2. Heat a splash of olive oil in a large pot over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the broth to the pot and bring to a gentle simmer.
  4. Carefully add the meatballs and cook until they float to the top.
  5. Stir in the small pasta and cook according to package instructions until al dente.
  6. Add the fresh spinach or escarole and cook for an additional 2–3 minutes until the greens wilt.
