- 1 lb ground beef or pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped parsley
- 1 egg
- Salt and pepper to taste
- 8 cups chicken or beef broth
- 1 cup small pasta (like acini di pepe or orzo)
- 2 cups fresh spinach or escarole
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Carrots and celery for added flavor (optional)
Instructions
- In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper. Mix until well combined and form into small meatballs.
- Heat a splash of olive oil in a large pot over medium heat. Add the minced garlic and sauté until fragrant.
- Add the broth to the pot and bring to a gentle simmer.
- Carefully add the meatballs and cook until they float to the top.
- Stir in the small pasta and cook according to package instructions until al dente.
- Add the fresh spinach or escarole and cook for an additional 2–3 minutes until the greens wilt.
- Serve hot in wide bowls, garnished with more Parmesan cheese and parsley, if desired.
Notes
Make a day in advance for deeper flavors. Air frying meatballs is another quick cooking alternative.
