This recipe comes together in a series of simple steps. Here’s exactly how to make it.

Step 1: Prepare the Cauliflower and Carrots Bring a large pot of salted water to a boil. Add the cauliflower and carrots and blanch for 2–3 minutes, just until slightly tender but still crisp.

Step 2: Cool the Vegetables Immediately transfer the blanched vegetables to a bowl of ice water. Let them cool for a few minutes, then drain very well and pat dry. This keeps the vegetables crisp and colorful.

Step 3: Prepare the Remaining Vegetables Chop the celery, bell peppers, red onion, pepperoncini, artichokes, and sun-dried tomatoes. Slice the olives if they are large.
