Step 2: Blanch the Firm Vegetables Bring a large pot of salted water to a boil. Add the cauliflower and carrots and blanch for 2–3 minutes, just until slightly tender but still crisp. Transfer immediately to a bowl of ice water, then drain thoroughly.
