Ingredients

  • Pinch of salt
  • 1/2 cup brewed espresso or strong coffee, hot
  • 1/2 cup semi-sweet chocolate chunks or chips
  • 1/4 cup whole milk, hot
  • 1 package ladyfingers
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Mix the Cream: In a large mixing bowl, combine the mascarpone cheese, granulated sugar, and vanilla paste. Beat gently until smooth and creamy.
  2. Whip the Cream: Slowly pour the cold heavy cream into the mascarpone mixture while mixing on low speed. Increase the speed slightly until soft peaks form.
  3. Prepare the Ganache: In a separate bowl, add the finely chopped semi-sweet chocolate along with a pinch of salt. Pour hot heavy cream over the chocolate and let it rest for 5 minutes, then stir until glossy.
  4. Create the Chocolate Soak: Whisk together hot espresso, chocolate chunks, and hot milk in another bowl.
  5. Cool the Soak: Allow the hot chocolate soak to cool slightly.
  6. Dip the Ladyfingers: Quickly dip each ladyfinger into the chocolate soak for 1-2 seconds and arrange at the bottom of your baking dish.
  7. Layer the Cream: Spread half of the mascarpone cream evenly over the soaked ladyfingers.
  8. Repeat the Layers: Add another layer of dipped ladyfingers, followed by the remaining mascarpone cream.
  9. Finish with Ganache: Pour the cooled chocolate ganache evenly over the top layer.
  10. Chill: Cover the dish and refrigerate for at least 8 hours or overnight.
  11. Dust and Serve: Before serving, dust the top with unsweetened cocoa powder.
