- 1 cup rolled oats
- 1 cup sourdough starter (bubbly and active)

- 1/4 cup honey (preferably local)
- 1 tsp salt
- 2 tbsp olive oil
- 1 packet (2 1/4 tsp) active dry yeast
Instructions
- Combine the wet ingredients: In a large bowl, mix together the sourdough starter, water, and honey until blended.
- Mix the dry ingredients: In another bowl, whisk together the all-purpose flour, whole wheat flour, rolled oats, salt, and yeast.
- Combine mixtures: Gradually fold the dry ingredients into the wet mixture, stirring until a cohesive dough forms.
- Knead the dough: Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
- First rise: Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
- Shape the dough: Once risen, punch down the dough gently, form it into a loaf shape, and place it in a greased loaf pan.
- Second rise: Cover the loaf and let it rise again for 30-60 minutes until puffed up.
- Preheat the oven: Preheat your oven to 350°F (175°C).
- Bake the bread: Bake for 30-35 minutes until golden brown and hollow sounding when tapped.
- Cool and enjoy: Allow to cool in the pan for a few minutes, then transfer to a wire rack before slicing.
