- 3 cups all-purpose flour
- 1 1/2 cups active sourdough starter
- 1 cup warm water
- 1 tablespoon sugar
- 1 tablespoon salt
- 1 tablespoon baking soda (for boiling)
- Toppings: sesame seeds, poppy seeds, or everything bagel seasoning
Instructions
- Combine the flour, sourdough starter, warm water, sugar, and salt in a large mixing bowl to form a dough.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise until doubled in size (4-6 hours or overnight in the fridge).
- Once risen, punch down the dough, divide into 8 pieces, and shape into bagels.
- Let the shaped bagels rest for 30 minutes while preheating your oven to 425°F (220°C).
- Boil the bagels in a large pot of water with baking soda for 1-2 minutes on each side.
- Transfer the bagels to a parchment-lined baking sheet and sprinkle on desired toppings.
- Bake for about 20 minutes until golden brown and aromatic.
- Cool slightly before slicing and enjoying with your favorite spreads.
Notes
For make-ahead options, freeze shaped bagels before boiling. To reheat, toast or bake at 350°F (175°C) for 10-15 minutes.
