Description

Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 cups active sourdough starter
  • 1 cup warm water
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 tablespoon baking soda (for boiling)
  • Toppings: sesame seeds, poppy seeds, or everything bagel seasoning

Instructions

  1. Combine the flour, sourdough starter, warm water, sugar, and salt in a large mixing bowl to form a dough.
  2. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  3. Place the dough in a greased bowl, cover, and let it rise until doubled in size (4-6 hours or overnight in the fridge).
  4. Once risen, punch down the dough, divide into 8 pieces, and shape into bagels.
  5. Let the shaped bagels rest for 30 minutes while preheating your oven to 425°F (220°C).
  6. Boil the bagels in a large pot of water with baking soda for 1-2 minutes on each side.
  7. Transfer the bagels to a parchment-lined baking sheet and sprinkle on desired toppings.
  8. Bake for about 20 minutes until golden brown and aromatic.
  9. Cool slightly before slicing and enjoying with your favorite spreads.

Notes

For make-ahead options, freeze shaped bagels before boiling. To reheat, toast or bake at 350°F (175°C) for 10-15 minutes.
