- 2 Chicken Breasts, cut into bite-sized pieces
- 2 Bell Peppers, chopped (red, yellow, or orange)
- 1 Zucchini, chopped
- 1 Red Onion, chopped
- 3 tablespoons Olive Oil
- Juice of 1 Lemon
- 1 teaspoon Oregano
- 1 teaspoon Thyme
- Salt, to taste
- Pepper, to taste
- 1 teaspoon Garlic Powder
Instructions
- Preheat your grill or oven to 400°F (200°C).
- Cut the chicken breasts into bite-sized pieces and place them in a bowl.
- Chop the bell peppers, zucchini, and red onion into small pieces.
- In a separate bowl, mix olive oil, lemon juice, oregano, thyme, salt, pepper, and garlic powder.
- Combine the chicken and vegetables in the bowl with the marinade and toss to coat.
- Lay out large pieces of aluminum foil.
- Divide the chicken and vegetable mixture onto each piece of foil.
- Fold the foil packets to seal them securely.
- Place the packets on the grill or in the oven and cook for 25-30 minutes.
- Carefully open the packets and serve hot.

Make-ahead tips: Prepare the chicken and veggies, then store them in the marinade in the fridge for up to 24 hours. You can also substitute the chicken with thighs for a richer flavor.
