Ingredients

  • 2 Chicken Breasts, cut into bite-sized pieces
  • 2 Bell Peppers, chopped (red, yellow, or orange)
  • 1 Zucchini, chopped
  • 1 Red Onion, chopped
  • 3 tablespoons Olive Oil
  • Juice of 1 Lemon
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon Garlic Powder

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Cut the chicken breasts into bite-sized pieces and place them in a bowl.
  3. Chop the bell peppers, zucchini, and red onion into small pieces.
  4. In a separate bowl, mix olive oil, lemon juice, oregano, thyme, salt, pepper, and garlic powder.
  5. Combine the chicken and vegetables in the bowl with the marinade and toss to coat.
  6. Lay out large pieces of aluminum foil.
  7. Divide the chicken and vegetable mixture onto each piece of foil.
  8. Fold the foil packets to seal them securely.
  9. Place the packets on the grill or in the oven and cook for 25-30 minutes.
  10. Carefully open the packets and serve hot.

Notes

Make-ahead tips: Prepare the chicken and veggies, then store them in the marinade in the fridge for up to 24 hours. You can also substitute the chicken with thighs for a richer flavor.
