  • 500 g chicken thighs or breast, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 zucchini, chopped
  • 1 cup green beans, chopped
  • 1 can (400 g) diced tomatoes
  • 3 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the chicken: Heat olive oil in a large pot over medium heat. Once hot, add the cubed chicken. Sear for 4–5 minutes until golden brown, developing a delicious crust. Set the chicken aside.
  2. Sauté vegetables: In the same pot, toss in the chopped onion and minced garlic. Sauté for about 2 minutes, allowing their flavors to meld.
  3. Add carrots and potatoes: Stir in the sliced carrots and cubed potatoes, cooking for another 3–4 minutes.
  4. Combine the ingredients: Pour in the can of diced tomatoes and chicken broth. Stir in dried thyme, paprika, and bay leaf. Bring this concoction to a gentle boil.
  5. Simmer and savor: Lower the heat and let the stew simmer uncovered for 20–25 minutes.
  6. Add zucchini and green beans: Toss in the chopped zucchini and green beans, letting them cook for an additional 10 minutes until tender.
  7. Season and serve: Season to taste with salt and pepper. Remove the bay leaf, garnish with fresh parsley, and serve warm!

Notes

This stew tastes even better the next day as the flavors meld over time. Feel free to customize with your favorite vegetables or add a pinch of chili flakes for some heat.
