Instructions
- Preheat your oven to 350°F (175°C). Prepare your two 9-inch round cake pans by greasing and flouring them.
- Combine flour, sugar, baking soda, salt, cinnamon, and nutmeg in a large mixing bowl.
- Pour the oil into the dry mixture, followed by the eggs, grated carrots, crushed pineapple, and vanilla extract; mix until just combined.
- Divide the batter equally between the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
- Beat together the softened cream cheese and butter until creamy, then gradually add powdered sugar and remaining vanilla extract.
- Frost the cooled cake layers with cream cheese frosting and enjoy.
