  • 1 cup crushed pineapple (drained)

  • 8 oz cream cheese (softened)
  • 1/2 cup butter (softened)
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your two 9-inch round cake pans by greasing and flouring them.
  2. Combine flour, sugar, baking soda, salt, cinnamon, and nutmeg in a large mixing bowl.
  3. Pour the oil into the dry mixture, followed by the eggs, grated carrots, crushed pineapple, and vanilla extract; mix until just combined.
  4. Divide the batter equally between the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
  7. Beat together the softened cream cheese and butter until creamy, then gradually add powdered sugar and remaining vanilla extract.
  8. Frost the cooled cake layers with cream cheese frosting and enjoy.
