Ingredients

- 1 lb ground beef
- 1 medium onion, finely chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 cups shredded cheddar cheese (divided)
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef in a large skillet over medium heat, breaking it apart and draining excess fat.
- Sauté the onion, green bell pepper, and red bell pepper until tender.
- Layer half of the beef mixture in a baking dish, sprinkle with half of the cheddar and all of the mozzarella cheese.
- Repeat with the remaining beef mixture and top with the last half of cheddar cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden.
- Cool for a few minutes before serving.
Notes
You can prepare the casserole the night before and refrigerate it, then bake when ready to serve. Customize by adding other vegetables or changing the type of cheese.
