- 1 tsp Thyme

- 1 tsp Salt
- 1 Cup Chicken Broth
- 500g Baby Potatoes
- Fresh Parsley for garnish
Instructions
- Prep the oven and chicken: Preheat your oven to 200°C (400°F). Rinse the chicken thighs or drumsticks under cold water, pat them dry, and then season generously with salt, black pepper, oregano, and thyme.
- Mix the citrus goodness: In a mixing bowl, whisk together the freshly squeezed lemon juice, minced garlic, olive oil, and chicken broth until well blended.
- Arrange in the baking dish: Place the seasoned chicken and halved baby potatoes into the baking dish, pouring the lemon mixture over the top.
- Roast to perfection: Slide the baking dish into the preheated oven and roast for 45–50 minutes, basting occasionally.
- Garnish and serve: Remove the baking dish from the oven, sprinkle fresh parsley, and serve hot.
Notes
Consider marinating the chicken overnight for enhanced flavor. You can also substitute chicken thighs with breasts for a leaner option.
