- 2 tbsp sugar
- 2 1/4 tsp instant yeast
- 1/2 tsp salt
- 3/4 cup warm buttermilk
- 1 large egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
- Vegetable oil (as needed for frying)
- 1 1/2 cups powdered sugar
- 3–4 tbsp milk (or buttermilk for extra flavor)
- 1/2 tsp vanilla extract (for glaze)
Instructions
- Combine the flour, sugar, yeast, and salt in a large mixing bowl.
- Whisk together the warm buttermilk, egg, melted butter, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry mixture and stir until a dough forms.
- Knead the dough lightly for about 2–3 minutes.
- Cover the dough with a towel and let it rise in a warm area for about 60 minutes.
- Roll out the dough to about 1/2 inch thick on a floured surface and cut into squares.
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Fry the squares in batches for 1–2 minutes on each side until golden brown.
- Remove them from the oil and let them drain on paper towels.
- Whisk together powdered sugar, milk, and vanilla extract for the glaze.
- Dip warm beignet squares into the glaze and let excess drip off.
Notes
Consider using whole wheat flour for a healthier option or coconut oil for a dairy-free version. Be mindful of oil temperature for the perfect texture.
