Ingredients

  • 2 1/4 tsp instant yeast
  • 1/2 tsp salt
  • 3/4 cup warm buttermilk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • Vegetable oil (as needed for frying)
  • 1 1/2 cups powdered sugar
  • 34 tbsp milk (or buttermilk for extra flavor)
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Combine the flour, sugar, yeast, and salt in a large mixing bowl.
  2. Whisk together the warm buttermilk, egg, melted butter, and vanilla extract in a separate bowl.
  3. Pour the wet ingredients into the dry mixture and stir until a dough forms.
  4. Knead the dough lightly for about 2–3 minutes.
  5. Cover the dough with a towel and let it rise in a warm area for about 60 minutes.
  6. Roll out the dough to about 1/2 inch thick on a floured surface and cut into squares.
  7. Heat vegetable oil in a deep pan to 350°F (175°C).
  8. Fry the squares in batches for 1–2 minutes on each side until golden brown.
  9. Remove them from the oil and let them drain on paper towels.
  10. Whisk together powdered sugar, milk, and vanilla extract for the glaze.
  11. Dip warm beignet squares into the glaze and let excess drip off.

Notes

Consider using whole wheat flour for a healthier option or coconut oil for a dairy-free version. Be mindful of oil temperature for the perfect texture.
