This recipe is simple and requires minimal active preparation time. Here’s exactly how to make it.
Wash all the vegetables thoroughly. Cut the cauliflower into small bite-sized florets. Slice the cucumbers into thick rounds or spears. Cut the carrots into thin sticks or rounds so they pickle evenly. Slice the bell pepper and red onion.
Divide the fresh dill and crushed garlic between clean glass jars. Pack in the cauliflower, cucumbers, carrots, bell peppers, red onion, and optional jalapeño. Alternate the vegetables to create colorful layers. Pack them snugly without crushing them.
Combine the vinegar, water, salt, sugar, mustard seeds, peppercorns, coriander seeds, dill seeds, optional red pepper flakes, and bay leaves in a saucepan. Bring to a gentle simmer, stirring until the salt and sugar completely dissolve. Remove from the heat.
Carefully pour the warm brine over the vegetables until they’re completely submerged. Gently tap the jars against the counter to release trapped air bubbles. Add additional brine if necessary.
