- 2 lbs red potatoes, quartered
- 4 tbsp butter, melted
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the red potatoes by washing and cutting them into quarters.
- Mix the quartered potatoes with melted butter, olive oil, minced garlic, Italian seasoning, paprika, black pepper, and salt in a large mixing bowl.
- Spread the coated potatoes evenly on the prepared baking sheet.
- Roast in the preheated oven for 35–40 minutes, turning halfway through.
- Garnish with fresh parsley and serve hot.
Notes
For extra crispiness, soak potatoes in cold water for 30 minutes before roasting. Make-ahead by prepping the potatoes a day in advance.
