Description

Delightful Garlic Butter Roasted Red Potatoes, perfectly crispy on the outside and fluffy on the inside, infused with rich garlic and fragrant herbs.


Ingredients

  • 2 lbs red potatoes, quartered
  • 4 tbsp butter, melted
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the red potatoes by washing and cutting them into quarters.
  3. Mix the quartered potatoes with melted butter, olive oil, minced garlic, Italian seasoning, paprika, black pepper, and salt in a large mixing bowl.
  4. Spread the coated potatoes evenly on the prepared baking sheet.
  5. Roast in the preheated oven for 35–40 minutes, turning halfway through.
  6. Garnish with fresh parsley and serve hot.

Notes

For extra crispiness, soak potatoes in cold water for 30 minutes before roasting. Make-ahead by prepping the potatoes a day in advance.
