Ingredients

- 2–3 cups rotisserie chicken, shredded
- 2 tbsp garlic butter
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 1 cup frozen peas
- 1 cup shredded cheese (optional)
- 1 can refrigerated biscuit dough
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil and garlic butter in a large skillet over medium heat.
- Add the diced onion and garlic, sautéing until soft, about 3-4 minutes.
- Stir in the carrots and cook until tender.
- Add the shredded chicken and frozen peas, mixing well.
- If using, stir in the cheese until melted.
- Transfer the filling into a baking dish.
- Top with biscuit dough, arranging it evenly over the filling.
- Bake for 20-25 minutes, or until the biscuits are golden brown.
- Let cool slightly before serving.
