This recipe is simple and mostly hands-off once the brine is prepared. Here’s exactly how to make it.
Place the hot dog pieces into a large clean glass jar, or divide them evenly between two quart-sized jars.
Add the sliced garlic, onion, and jalapeños evenly around the hot dogs, distributing them throughout the jar so every bite gets plenty of flavor.
In a saucepan, combine the vinegar, water, pickling salt, sugar, hot sauce, crushed red pepper flakes, black peppercorns, mustard seeds, coriander seeds, smoked paprika, cayenne pepper, and bay leaves.
