- 3 large sweet onions (like Vidalia)
- 1 lb (450g) ground beef
- 1 cup shredded cheddar cheese
- 6 slices bacon (cooked & chopped)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1/2 tsp chili flakes (optional)
- 2 tbsp BBQ sauce
Instructions
- Prep the onions by peeling and slicing them in half from top to bottom, removing the inner layers to create shells.
- Mix the filling by combining ground beef, shredded cheese, chopped bacon, salt, pepper, paprika, chili flakes, and BBQ sauce in a large bowl.
- Stuff each onion shell with the beef mixture, pressing down gently, then place another layer of onion on top.
- Prepare a baking sheet lined with parchment paper or foil, and arrange the stuffed onion bombs on it.
- Bake in a preheated oven at 375°F (190°C) for 35-40 minutes until the onions are tender and beef is cooked through.
- Brush with additional BBQ sauce in the last 5 minutes for extra flavor.
Notes
These stuffed onion bombs can be made ahead and refrigerated for up to 24 hours before baking.
