Ingredients

Scale
  • 3 large sweet onions (like Vidalia)
  • 1 lb (450g) ground beef
  • 1 cup shredded cheddar cheese
  • 6 slices bacon (cooked & chopped)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp chili flakes (optional)
  • 2 tbsp BBQ sauce

Instructions

  1. Prep the onions by peeling and slicing them in half from top to bottom, removing the inner layers to create shells.
  2. Mix the filling by combining ground beef, shredded cheese, chopped bacon, salt, pepper, paprika, chili flakes, and BBQ sauce in a large bowl.
  3. Stuff each onion shell with the beef mixture, pressing down gently, then place another layer of onion on top.
  4. Prepare a baking sheet lined with parchment paper or foil, and arrange the stuffed onion bombs on it.
  5. Bake in a preheated oven at 375°F (190°C) for 35-40 minutes until the onions are tender and beef is cooked through.
  6. Brush with additional BBQ sauce in the last 5 minutes for extra flavor.

Notes

These stuffed onion bombs can be made ahead and refrigerated for up to 24 hours before baking.
