This recipe involves a quick blanch followed by a spicy brine. Here’s exactly how to make it.

Step 1: Prepare the Garlic

Peel the garlic cloves and trim away any damaged portions. Keep the cloves whole for a hearty, crunchy pickle.

Step 2: Blanch the Garlic

Bring a pot of water to a boil. Add the garlic cloves and blanch for approximately 1 minute. Drain immediately and allow them to cool slightly. This takes some of the raw bite away while preserving the garlic’s texture.

Step 3: Prepare the Jalapeños

Wash the jalapeños and slice them into thin rounds. For maximum heat, keep the seeds and membranes. For a milder version, remove some or all of the seeds.

Step 4: Make the Fiery Brine
