- 3 cups rotisserie chicken, shredded
- 1 packet Ranch seasoning
- 1 packet au jus gravy mix
- Pepperoncini peppers, whole or sliced
- 115 g cream cheese
- 1/2 cup sour cream
- 1 cup Monterey Jack cheese, shredded
- Extra cheese for topping
- 1/4 cup unsalted butter, melted
- 1/4 cup pepperoncini brine
- 1 cup milk
- 3 cups cooked egg noodles
- Onion, diced
- Bell pepper, diced
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, Ranch seasoning, au jus mix, cream cheese, sour cream, melted butter, pepperoncini brine, and milk in a large mixing bowl.
- Add the diced onion, bell pepper, pepperoncini peppers, cooked egg noodles, and shredded Monterey Jack cheese, mixing until combined.
- Transfer the mixture to a greased 9×13 inch casserole dish and top with extra shredded cheese.
- Bake for 25-30 minutes until golden and bubbly.
- Serve warm.
Notes
Can be made ahead and refrigerated; bake when ready. Great served with garlic bread or a fresh salad.
