A comforting casserole featuring tender rotisserie chicken, creamy cheese, and zesty pepperoncini, perfect for family dinners.


Ingredients

  • 3 cups rotisserie chicken, shredded
  • 1 packet Ranch seasoning
  • 1 packet au jus gravy mix
  • Pepperoncini peppers, whole or sliced
  • 115 g cream cheese
  • 1/2 cup sour cream
  • 1 cup Monterey Jack cheese, shredded
  • Extra cheese for topping
  • 1/4 cup unsalted butter, melted
  • 1/4 cup pepperoncini brine
  • 1 cup milk
  • 3 cups cooked egg noodles
  • Onion, diced
  • Bell pepper, diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, Ranch seasoning, au jus mix, cream cheese, sour cream, melted butter, pepperoncini brine, and milk in a large mixing bowl.
  3. Add the diced onion, bell pepper, pepperoncini peppers, cooked egg noodles, and shredded Monterey Jack cheese, mixing until combined.
  4. Transfer the mixture to a greased 9×13 inch casserole dish and top with extra shredded cheese.
  5. Bake for 25-30 minutes until golden and bubbly.
  6. Serve warm.

Notes

Can be made ahead and refrigerated; bake when ready. Great served with garlic bread or a fresh salad.
