Description

A comforting crockpot dish featuring tender pork tenderloin simmered in a rich broth with vegetables.


Ingredients

  • 2 pounds pork tenderloin
  • 1 onion, chopped
  • 4 carrots, sliced
  • 4 potatoes, quartered
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh herbs (rosemary or thyme) for garnish

Instructions

  1. Place the pork tenderloin at the bottom of the crockpot.
  2. Add the chopped onion, sliced carrots, and quartered potatoes around the tenderloin.
  3. Mix together the chicken broth, minced garlic, balsamic vinegar, brown sugar, salt, and pepper in a mixing bowl.
  4. Pour the marinade over the pork and vegetables.
  5. Cover the crockpot and set it to cook on low for about 6-8 hours.
  6. Once cooked, slice the tenderloin and serve with the vegetables.
  7. Garnish with fresh herbs before serving.

You can prepare the marinade the night before for convenience.
