Description

Tender, juicy pork belly burnt ends coated in a sweet and smoky barbecue glaze, slow-cooked to perfection in a crockpot.

  • 3 lbs skinless pork belly, cut into 1-inch cubes
  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • Salt & black pepper to taste
  • 1 cup of your favorite sweet BBQ sauce
  • 1/4 cup honey
  • 2 tbsp butter (melted)
  • 1 tbsp apple cider vinegar

Instructions

  1. Prepare the Spice Mixture: In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, chili powder, salt, and pepper. Toss the pork belly cubes in this mixture, ensuring each piece is completely and evenly coated in the fragrant spices.
  2. Layer in the Crockpot: Arrange the seasoned pork belly cubes in a single layer at the bottom of the crockpot. Cover it and set to cook on LOW for 5-6 hours or HIGH for 3-4 hours until the pork is incredibly tender, and the fat has rendered beautifully.
  3. Drain the Liquid: With a slotted spoon, carefully remove the cooked pork cubes from the crockpot and set them aside. Drain and discard most of the rendered fat from the slow cooker pot, leaving just a little to enhance the sauce.
  4. Whisk the Glaze: In a bowl, whisk together the BBQ sauce, honey, melted butter, and apple cider vinegar until the mixture is smooth and well combined.
  5. Coat the Pork: Return the pork belly cubes to the crockpot and pour the glaze over the top. Toss gently to ensure that each piece is coated with the luscious sauce.
  6. Final Cooking Phase: Cover the crockpot once more and cook on HIGH for an additional 30 minutes. This allows the sauce to thicken, become sticky, bubbly, and deeply caramelized.
  7. Optional Step: For an authentic barbecue-pit finish, spread the glazed pieces on a foil-lined baking sheet and broil in the oven for 3-5 minutes.
