  • 2 tbsp mayonnaise

  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper

  • 1 cup finely chopped fresh spinach
  • 1/2 cup canned or jarred artichoke hearts, drained and finely chopped
  • 2 tbsp finely chopped green onion
  • 2 tbsp finely diced red bell pepper
  • 2 tbsp finely grated carrot
  • 1 tbsp finely diced celery

For the Fresh Herbs 🌱

  • 1 tbsp finely chopped fresh parsley
  • 1 tbsp finely chopped fresh dill
  • 1 tbsp finely chopped fresh chives

For Finishing ✨

  • 1 tbsp finely grated Parmesan
  • Freshly cracked black pepper
  • Chopped fresh parsley
  • Thinly sliced green onion, optional

Instructions

Step 1: Prepare the Spinach πŸ₯¬

Wash the fresh spinach thoroughly.

Pat it dry, then chop it very finely.

Place the chopped spinach inside a clean kitchen towel or several layers of paper towel.

Gently squeeze to remove excess moisture.

This is an important step because excess water from the spinach can loosen the cream cheese base and make the finished spread watery.

Step 2: Drain and Chop the Artichokes

Drain the artichoke hearts thoroughly.

If they’re packed in oil, gently pat them with paper towels to remove excess oil before chopping.

Finely chop the artichokes into small pieces.

Keeping them relatively small allows the artichoke flavor to distribute throughout the spread rather than leaving very large pieces in individual bites.

Step 3: Prepare the Garden Vegetables πŸ₯•πŸŒΆοΈ

Finely chop the green onion.

Dice the red bell pepper and celery into very small pieces.

Finely grate the carrot.

If any of the prepared vegetables seem particularly moist, gently pat them with paper towels.

Place the softened cream cheese in a medium mixing bowl.
