Description

A delicious blend of tender chicken, sautéed mushrooms, and fresh spinach in a rich, creamy sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (sliced horizontally into thin cutlets)
  • 2 cups cremini or button mushrooms, sliced
  • 2 cups fresh baby spinach
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Fresh parsley, finely chopped (for garnish)
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup light cream, half-and-half, or plain Greek yogurt
  • 3 cloves garlic, finely minced
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • Salt to taste
  • Coarsely cracked black pepper to taste

Instructions

  1. Dry and season the chicken: Pat the chicken cutlets completely dry with paper towels. Generously season both sides with onion powder, Italian seasoning, salt, and pepper.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken cutlets, searing them for 4-5 minutes on each side until golden-brown and cooked through. Remove and set aside.
  3. Sauté the mushrooms and garlic: In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté for 4-5 minutes until tender. Add minced garlic and cook for 1 more minute.
  4. Create the creamy sauce: Pour chicken broth and light cream into the skillet with the mushrooms. Scrape the bottom to deglaze and simmer for 3 minutes until slightly thickened.
  5. Add spinach and chicken: Introduce fresh spinach and stir for 1-2 minutes until wilted. Return the chicken to the skillet and spoon the sauce over it, warming for 1 minute before garnishing with parsley.

Notes

You can prepare the chicken cutlets and sauce components in advance. Allow flavors to meld overnight in the fridge; reheat gently on the stovetop.
