A delicious blend of tender chicken, sautéed mushrooms, and fresh spinach in a rich, creamy sauce.

- 1.5 lbs boneless, skinless chicken breasts (sliced horizontally into thin cutlets)
- 2 cups cremini or button mushrooms, sliced
- 2 cups fresh baby spinach
- 1 tbsp olive oil
- 1 tbsp butter
- Fresh parsley, finely chopped (for garnish)
- 1/2 cup low-sodium chicken broth
- 1/2 cup light cream, half-and-half, or plain Greek yogurt
- 3 cloves garlic, finely minced
- 1/2 tsp onion powder
- 1/2 tsp Italian seasoning
- Salt to taste
- Coarsely cracked black pepper to taste
Instructions
- Dry and season the chicken: Pat the chicken cutlets completely dry with paper towels. Generously season both sides with onion powder, Italian seasoning, salt, and pepper.
- Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken cutlets, searing them for 4-5 minutes on each side until golden-brown and cooked through. Remove and set aside.
- Sauté the mushrooms and garlic: In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté for 4-5 minutes until tender. Add minced garlic and cook for 1 more minute.
- Create the creamy sauce: Pour chicken broth and light cream into the skillet with the mushrooms. Scrape the bottom to deglaze and simmer for 3 minutes until slightly thickened.
- Add spinach and chicken: Introduce fresh spinach and stir for 1-2 minutes until wilted. Return the chicken to the skillet and spoon the sauce over it, warming for 1 minute before garnishing with parsley.
Notes
You can prepare the chicken cutlets and sauce components in advance. Allow flavors to meld overnight in the fridge; reheat gently on the stovetop.
