  • 6 chicken drumsticks
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prep the drumsticks: Pat the chicken dry and season with salt, black pepper, and Italian seasoning.
  2. Sear the chicken: Heat olive oil in a skillet over medium-high heat; add drumsticks and sear until golden brown, about 8-10 minutes. Remove and set aside.
  3. Cook the mushrooms: In the same pan, melt butter, then add sliced mushrooms and sauté for about 5 minutes until softened. Stir in minced garlic and cook for an additional minute.
  4. Build the sauce: Add chicken broth and simmer for 2 minutes. Then stir in heavy cream and parmesan cheese until the sauce is creamy and smooth.
  5. Return the chicken: Nestle the seared drumsticks back into the pan and cover; let it simmer on low heat for 25-30 minutes.
  6. Final touch: Remove the lid, garnish with parsley, and serve.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut milk. You can use chicken thighs instead of drumsticks.
