Instructions
- Craft the crust by combining the flour, salt, and sugar. Cut in the butter until it resembles coarse crumbs. Gradually add cold water until the dough holds together, shape it into a ball, wrap it, and refrigerate for about 50 minutes.
- Prepare the filling by blending brown sugar with flour, then add the eggs and milk, whisking until smooth. Dissolve remaining brown sugar in a saucepan, stir in hot water, and blend in the egg mixture, cooking until thickened.
- Bake the crust at 425°F for 15 to 20 minutes until golden, then lower the temperature to 350°F.
- Fill the baked crust with the butterscotch filling and bake for another 15 to 20 minutes until set.
- Create the meringue by whisking egg whites, sugar, cream of tartar, and extracts over a double boiler until reaching 160°F, then whip until medium-stiff peaks form.
- Finish by spreading the meringue over the cooled pie and toasting lightly with a kitchen torch.
