- 8 oz rotini or bow tie pasta
- 4 cups shredded cabbage (green and purple mixed)
- 1 cup shredded carrots
- 1/2 cup finely chopped red onion
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and allow it to cool completely.
- In a large bowl, combine the shredded cabbage, shredded carrots, and finely chopped red onion. Mix to distribute evenly.
- In a separate smaller bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth. Adjust seasoning to your liking.
- Add the cooled pasta to the vegetable mixture and pour the creamy dressing over the top.
- Toss everything together gently until the pasta and veggies are evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
This salad can be made a day ahead for deeper flavors. Customize with additional veggies or proteins as desired.
