Description

A refreshing and creamy pasta salad featuring crunchy coleslaw ingredients, perfect for potlucks and gatherings.


Ingredients

  • 8 oz rotini or bow tie pasta
  • 4 cups shredded cabbage (green and purple mixed)
  • 1 cup shredded carrots
  • 1/2 cup finely chopped red onion
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and allow it to cool completely.
  2. In a large bowl, combine the shredded cabbage, shredded carrots, and finely chopped red onion. Mix to distribute evenly.
  3. In a separate smaller bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth. Adjust seasoning to your liking.
  4. Add the cooled pasta to the vegetable mixture and pour the creamy dressing over the top.
  5. Toss everything together gently until the pasta and veggies are evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.
