- 1 small yellow onion, sliced

- 1 cup heavy cream
Instructions
- Cook the sausage: In a large skillet over medium heat, add the sliced beef sausage. Cook until browned, allowing those irresistible seared bits to form.
- Sauté the onions: Add the sliced onion to the skillet. Sauté until softened, about 3-4 minutes.
- Add the potatoes: Stir in the cubed Yukon gold potatoes. Cook for approximately 10-12 minutes or until fork-tender.
- Pour in the cream: Once the potatoes are tender, pour in the heavy cream and bring to a gentle simmer.
- Melt the cheese: Add the shredded sharp cheddar cheese and stir until melted and combined.
- Serve hot: Ladle onto plates and enjoy! Optionally, sprinkle with fresh parsley.
