  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, toasted & chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely diced
  • 1/2 red bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt & freshly cracked black pepper
  • 2 tbsp fresh orange juice (optional)
  • 1 tbsp apple cider vinegar (optional)

Instructions

  1. Add the rinsed chickpeas, dried cranberries, chopped walnuts, crumbled feta, finely diced red onion, diced bell pepper, and minced parsley to a large mixing bowl.
  2. Whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper in a separate container until smooth.
  3. Pour the dressing over the salad and gently toss everything together until evenly coated.
  4. Allow the salad to sit for about 10 minutes before serving, either chilled or at room temperature.
