Description

A delightful tart combining creamy ricotta and tart cranberries in a flaky puff pastry crust, perfect for any occasion.


Ingredients

  • 1 puff pastry sheet
  • 1 cup ricotta cheese
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup cranberries
  • 1/4 cup sliced almonds
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your pastry by unrolling it into the tart pan and trimming as necessary.
  3. Mix the ricotta cheese, sugar, egg, and vanilla in a large bowl until smooth.
  4. Spread the ricotta mixture into the pastry shell evenly.
  5. Top with cranberries and sliced almonds for garnish.
  6. Bake for 30–35 minutes until golden brown and filling is slightly set.
  7. Remove from the oven and drizzle honey over the top while warm.
  8. Cool slightly before slicing and serving.

Notes

For a dairy-free option, use cashew cream or a non-dairy ricotta alternative. Ensure the puff pastry is also dairy-free.
