Description
A comforting casserole made with golden potatoes, tender beef, and layers of gooey melted cheese, perfect for family gatherings or cozy dinners.

- 1.5 lbs Ground beef (or ground turkey/pork)
- 4–5 Medium Yukon Gold potatoes, sliced into thin rounds
- 1 large Yellow onion, finely diced
- 3 cloves Garlic, minced
- 2 tbsp Tomato paste
- 1/2 cup Beef broth
- 2 cups Mozzarella or Monterey Jack cheese, shredded
- 2 tbsp Olive oil
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and freshly cracked black pepper to taste
- Fresh finely chopped parsley or chives (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Toss the sliced potatoes with 1 tablespoon of olive oil, salt, pepper, and smoked paprika. Spread them out on a baking sheet and bake for 15-20 minutes until golden brown.
- In a skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook until browned, stirring occasionally. Drain excess grease.
- Add the diced onion and minced garlic to the skillet, stirring to combine. Sauté for about 3-4 minutes until the onion becomes translucent.
- Stir in the tomato paste, followed by the spice blend and pour in the beef broth. Let this simmer for approximately 5 minutes.
- Grease your baking dish generously. Layer half of the roasted potatoes, followed by the beef mixture and half of the shredded cheese. Finish with the remaining potatoes and cheese on top.
- Bake for an additional 10-15 minutes. Broil for the last 2 minutes for a golden top.
- Let the casserole cool for a few minutes before serving. Garnish with fresh parsley or chives.
Notes
Store leftovers in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat in the oven or microwave.
