- 1.5 lbs ground beef
- 2.5 tsp chili powder
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and black pepper to taste
- 2 eggs
- 2 tbsp heavy cream
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 3 tbsp tomato paste
- 1 lb frozen cauliflower rice, thawed and drained
- 1.5 cups grated cheddar cheese
Instructions
- Preheat your oven to 350°F and generously spray a casserole dish with cooking spray.
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Stir in 1.25 tsp of chili powder, 1 tsp of onion powder, 1 tsp of garlic powder, cumin, coriander, salt, and pepper. Let this simmer for a minute.
- In a mixing bowl, whisk together the eggs and heavy cream until smooth. Pour this mixture into the skillet with the beef and stir until combined.
- Transfer the mixture into the greased casserole dish, spreading it evenly.
- In the same skillet, heat 1 tbsp of olive oil over medium heat, add the chopped onion and sauté until softened, about 3-4 minutes.
- Stir in the remaining spices and tomato paste, cooking for another minute. Incorporate the cauliflower rice and allow it to cook for 3-4 minutes.
- Mix in 1 cup of grated cheddar cheese until melted. Pour this mixture over the beef layer.
- Bake in the preheated oven for 25–30 minutes until the top is golden.
- Top with the remaining cheese and bake again until melted.
- Allow to cool slightly before serving.
