Description

A comforting casserole layered with seasoned ground beef, creamy cauliflower rice, and topped with gooey melted cheese, perfect for family gatherings or a cozy night in.


Ingredients

  • 1.5 lbs ground beef
  • 2.5 tsp chili powder
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and black pepper to taste
  • 2 eggs
  • 2 tbsp heavy cream
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 3 tbsp tomato paste
  • 1 lb frozen cauliflower rice, thawed and drained
  • 1.5 cups grated cheddar cheese

Instructions

  1. Preheat your oven to 350°F and generously spray a casserole dish with cooking spray.
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Stir in 1.25 tsp of chili powder, 1 tsp of onion powder, 1 tsp of garlic powder, cumin, coriander, salt, and pepper. Let this simmer for a minute.
  4. In a mixing bowl, whisk together the eggs and heavy cream until smooth. Pour this mixture into the skillet with the beef and stir until combined.
  5. Transfer the mixture into the greased casserole dish, spreading it evenly.
  6. In the same skillet, heat 1 tbsp of olive oil over medium heat, add the chopped onion and sauté until softened, about 3-4 minutes.
  7. Stir in the remaining spices and tomato paste, cooking for another minute. Incorporate the cauliflower rice and allow it to cook for 3-4 minutes.
  8. Mix in 1 cup of grated cheddar cheese until melted. Pour this mixture over the beef layer.
  9. Bake in the preheated oven for 25–30 minutes until the top is golden.
  10. Top with the remaining cheese and bake again until melted.
  11. Allow to cool slightly before serving.
