Delicious bite-sized pie cups filled with creamy cottage cheese and sweet wild blueberries, perfect for any occasion.


Ingredients

  • 1 cup cottage cheese
  • 2 cups wild blueberries
  • 2 tablespoons honey or maple syrup
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Puff pastry or phyllo dough for cup shells (optional)
  • Butter or oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine the cottage cheese, honey (or maple syrup), vanilla extract, lemon juice, and salt. Blend until smooth.
  3. In a separate bowl, gently mix the wild blueberries with cornstarch.
  4. Fold the blueberry mixture into the cottage cheese blend.
  5. Pour the filling into prepared pastry cups, filling them about three-quarters full.
  6. Bake for about 20-25 minutes, until the tops are golden brown.
  7. Allow to cool slightly before removing from the muffin tin.

Notes

Make-ahead: Prepare filling in advance and refrigerate. Assemble cups just before baking.
