- 1 cup cottage cheese
- 2 cups wild blueberries
- 2 tablespoons honey or maple syrup
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- Puff pastry or phyllo dough for cup shells (optional)
- Butter or oil for greasing
Instructions
- Preheat the oven to 350°F (175°C).
- In a blender, combine the cottage cheese, honey (or maple syrup), vanilla extract, lemon juice, and salt. Blend until smooth.
- In a separate bowl, gently mix the wild blueberries with cornstarch.
- Fold the blueberry mixture into the cottage cheese blend.
- Pour the filling into prepared pastry cups, filling them about three-quarters full.
- Bake for about 20-25 minutes, until the tops are golden brown.
- Allow to cool slightly before removing from the muffin tin.

Make-ahead: Prepare filling in advance and refrigerate. Assemble cups just before baking.
