- 2–3 Tomatoes, sliced
- 1/4 cup Fresh Basil Leaves
- 1 tablespoon Olive Oil
- Salt, to taste
- Black Pepper, to taste
- 1/4 cup Parmesan Cheese (optional)
- 8–10 Crispy Base (rice cakes or crackers)
Instructions
- Preheat your oven to 400°F (200°C).
- Lay out your chosen crispy base on a baking sheet.
- Spread a layer of cottage cheese on each crisp.
- Layer thin slices of fresh tomatoes over the cottage cheese.
- Sprinkle fresh basil leaves on top.
- Drizzle olive oil and season with salt and black pepper.
- Add grated Parmesan on top, if desired.
- Bake for about 10-15 minutes, until tomatoes soften and mixture is heated.
- Remove from the oven and let cool before serving.
Notes
