Ingredients

  • 23 Tomatoes, sliced
  • 1/4 cup Fresh Basil Leaves
  • 1 tablespoon Olive Oil
  • Salt, to taste
  • Black Pepper, to taste
  • 1/4 cup Parmesan Cheese (optional)
  • 810 Crispy Base (rice cakes or crackers)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lay out your chosen crispy base on a baking sheet.
  3. Spread a layer of cottage cheese on each crisp.
  4. Layer thin slices of fresh tomatoes over the cottage cheese.
  5. Sprinkle fresh basil leaves on top.
  6. Drizzle olive oil and season with salt and black pepper.
  7. Add grated Parmesan on top, if desired.
  8. Bake for about 10-15 minutes, until tomatoes soften and mixture is heated.
  9. Remove from the oven and let cool before serving.
