Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan thoroughly.
- Blend together the cottage cheese, eggs, sweetener, vanilla extract, and salt until smooth.
- Stir in the baking powder. If using almond flour, mix it in until just combined.
- Fold in the chopped strawberries carefully to maintain their shape.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-60 minutes, until the center is set and a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a cooling rack.
