- 1 large Eggplant
- 2 cups Cottage Cheese
- 2 cups Shredded Mozzarella Cheese
- 2 cups Marinara Sauce
- 2 tablespoons Olive Oil

- 1 tablespoon Italian Seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the eggplant into 1/4-inch thick rounds.
- Brush the eggplant slices with olive oil, seasoning with salt, pepper, and Italian seasoning.
- Arrange the eggplant on a baking sheet and roast for about 20 minutes, flipping halfway through.
- In a medium baking dish, layer your roasted eggplant, starting with one slice, followed by cottage cheese, marinara, and mozzarella.
- Repeat layers until all ingredients are used, finishing with mozzarella on top.
- Bake for 25-30 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before slicing and serving warm.
