Ingredients

  • 1 large Eggplant
  • 2 cups Cottage Cheese
  • 2 cups Shredded Mozzarella Cheese
  • 2 cups Marinara Sauce
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • 1 tablespoon Italian Seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplant into 1/4-inch thick rounds.
  3. Brush the eggplant slices with olive oil, seasoning with salt, pepper, and Italian seasoning.
  4. Arrange the eggplant on a baking sheet and roast for about 20 minutes, flipping halfway through.
  5. In a medium baking dish, layer your roasted eggplant, starting with one slice, followed by cottage cheese, marinara, and mozzarella.
  6. Repeat layers until all ingredients are used, finishing with mozzarella on top.
  7. Bake for 25-30 minutes until cheese is bubbly and golden.
  8. Let cool for a few minutes before slicing and serving warm.

Notes

For make-ahead convenience, assemble the layers a day in advance but do not bake until ready to serve.
