Ingredients

- 2 cups cottage cheese
- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Combine cottage cheese, shredded chicken, shredded cheese, green onions, cilantro, garlic powder, cumin, salt, and pepper in a large mixing bowl.
- Scoop portions of the mixture and form them into foldover shapes.
- Heat olive oil in a nonstick skillet over medium heat until shimmering.
- Place the foldovers into the skillet, searing for about 3-4 minutes on each side until golden brown.
- Remove from skillet and let cool briefly before serving warm.
Notes
Make the filling ahead of time and store in the fridge for up to two days. Try cooking in an air fryer for a healthier option.
