Description

Recreate the beloved Taco Bell Mexican Pizza with layers of seasoned beef, creamy refried beans, and plenty of cheese.


Ingredients

  • 1 to 1 1/2 pounds lean ground beef
  • 1 small onion, diced
  • 2 to 3 cloves garlic, minced
  • 1 packet taco seasoning
  • Salt and black pepper to taste
  • 1 can (15-ounce) refried beans, warmed
  • Salsa or taco sauce of choice
  • 8 small flour tortillas
  • 2 cups shredded Mexican cheese, divided
  • 4 green onions, sliced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cook the ground beef, diced onion, and minced garlic in a skillet over medium heat until browned.
  3. Stir in the taco seasoning, salt, and black pepper.
  4. Spread warmed refried beans evenly over each tortilla.
  5. Place the tortillas on a baking sheet, layering with seasoned beef, salsa, and cheese.
  6. Top each tortilla with another tortilla and repeat the process.
  7. Bake for 10-15 minutes or until the cheese is melted.
  8. Remove from the oven, top with sliced green onions, and serve hot.

Notes

For a vegetarian option, substitute ground beef with mushrooms or lentils. Consider prepping the beef mixture in advance, and assemble just before baking for best results.
